Product Overview

Erythritol is a type of carbohydrate called a sugar alcohol (or polyol), which is used as a food additive and sugar substitute. It is found naturally in various fruits, mushrooms, and fermented foods like wine, sake, and soy sauce.

Commercially, erythritol is produced through a fermentation process. Glucose from corn or wheat starch is fermented by safe, food-grade yeasts (such as Moniliella pollinis), then purified, crystallized, and dried. 

It has a clean, sweet taste similar to sugar, with about 60-80% of the sweetness of sucrose (table sugar). A unique feature is its strong cooling effect (high negative heat of solution), which creates a pleasant, refreshing sensation in the mouth.

Key Properties of Erythritol

1. Zero Calories: It is virtually non-caloric because it is rapidly absorbed by the small intestine and excreted unchanged in urine, without being metabolized .
2. High Digestive Tolerance: It causes less digestive upset compared to other sugar alcohols, as most of it is absorbed before reaching the large intestine .
3. Does Not Affect Blood Sugar: It has a zero glycemic index, making it safe for people with diabetes .
4. Non-Cariogenic: It does not contribute to tooth decay and may even help inhibit plaque formation, which is beneficial for oral health .
5. Heat Stable: It remains stable at high temperatures (up to about 180°C) and does not brown or caramelize like sugar
